Zucchini, tomato, and basil gratin

A delicious and healthy zucchini, tomato, and basil gratin that combines fresh vegetables with aromatic herbs for a delightful dish.

Ingredients

  • 2 medium zucchinis, sliced
  • 3 medium tomatoes, sliced
  • 1 cup fresh basil leaves
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sliced zucchinis, tomatoes, minced garlic, olive oil, salt, and pepper.
  3. Layer half of the zucchini mixture in a greased baking dish.
  4. Sprinkle half of the mozzarella and Parmesan cheese over the first layer.
  5. Add the fresh basil leaves on top.
  6. Layer the remaining zucchini mixture and top with the remaining cheese.
  7. Bake in the preheated oven for 30-35 minutes, or until the top is golden and bubbly.
  8. Let it cool for a few minutes before serving.
