White chocolate raspberry mousse

A rich and creamy dessert that combines the sweetness of white chocolate with the tartness of fresh raspberries, creating a delightful mousse.

  • 8 oz white chocolate, chopped
  • 1 cup heavy cream
  • 1 cup fresh raspberries
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 2 large egg whites
  • 1/4 teaspoon salt

Instructions

  1. In a heatproof bowl, melt the white chocolate over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.
  2. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold in the melted white chocolate and vanilla extract.
  3. In another bowl, beat the egg whites and salt until stiff peaks form. Gradually add sugar and continue to beat until glossy.
  4. Fold the egg whites into the white chocolate mixture gently until combined.
  5. In a blender, puree the raspberries until smooth. Strain to remove seeds if desired.
  6. Fold the raspberry puree into the mousse mixture, creating a marbled effect.
  7. Divide the mousse into serving dishes and refrigerate for at least 2 hours before serving.

Notes

  • For a more intense raspberry flavor, add more raspberry puree.
  • Garnish with fresh raspberries and whipped cream before serving.
  • This mousse can be made a day in advance for convenience.
