  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 cup snap peas
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger, grated
  • 1 teaspoon garlic, minced
  • Sesame seeds for garnish

Instructions

  1. Cook the soba noodles according to package instructions, then drain and rinse under cold water.
  2. In a large skillet, heat sesame oil over medium heat.
  3. Add garlic and ginger, sauté for 1 minute until fragrant.
  4. Add broccoli, bell peppers, carrots, and snap peas; stir-fry for 5-7 minutes until vegetables are tender-crisp.
  5. In a small bowl, mix soy sauce and rice vinegar.
  6. Add the cooked soba noodles and sauce to the skillet, tossing to combine.
  7. Serve in bowls, garnished with sesame seeds.
