Vegetable quinoa stuffed peppers are a nutritious and flavorful dish, perfect for a healthy meal option.

Ingredients

  • 4 bell peppers
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Rinse the quinoa under cold water and then cook it in vegetable broth according to package instructions.
  3. While the quinoa is cooking, prepare the bell peppers by cutting the tops off and removing the seeds.
  4. In a large bowl, combine the cooked quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
  5. Stuff each bell pepper with the quinoa mixture and place them in a baking dish.
  6. If using, sprinkle shredded cheese on top of the stuffed peppers.
  7. Bake in the preheated oven for 25-30 minutes, or until the peppers are tender.
  8. Remove from the oven and let cool for a few minutes before serving.
