Vegetable mung bean curry

A delicious and nutritious vegetable mung bean curry that is packed with flavor and perfect for a healthy meal.

  • 1 cup mung beans
  • 2 cups mixed vegetables (carrots, peas, bell peppers)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tomatoes, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 2 tablespoons oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the mung beans and soak them in water for at least 2 hours.
  2. In a pot, heat oil over medium heat and add cumin seeds.
  3. Add chopped onions, garlic, and ginger; sauté until onions are translucent.
  4. Add chopped tomatoes and cook until they soften.
  5. Add mixed vegetables, turmeric powder, garam masala, and salt; stir well.
  6. Add soaked mung beans and 4 cups of water; bring to a boil.
  7. Reduce heat and simmer for 30-40 minutes until beans are tender.
  8. Garnish with fresh cilantro before serving.
