  • 2 tablespoons green curry paste
  • 1 can (400ml) coconut milk
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, zucchini)
  • 1 cup vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • Fresh basil leaves for garnish

Instructions

  1. Heat coconut oil in a large pan over medium heat.
  2. Add green curry paste and sauté for 1-2 minutes until fragrant.
  3. Pour in the coconut milk and vegetable broth, stirring to combine.
  4. Add the mixed vegetables and bring to a simmer.
  5. Cook for 10-15 minutes until vegetables are tender.
  6. Stir in soy sauce and lime juice.
  7. Serve hot, garnished with fresh basil leaves.
