Sweet potato and black bean stuffed peppers

A delicious and nutritious dish featuring sweet potatoes and black beans stuffed in bell peppers, perfect for a healthy meal.

Ingredients

  • 4 large bell peppers
  • 2 medium sweet potatoes, peeled and diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a pot, boil the diced sweet potatoes until tender, about 10-15 minutes.
  3. In a large bowl, combine the cooked sweet potatoes, black beans, corn, cumin, chili powder, salt, and pepper.
  4. Cut the tops off the bell peppers and remove the seeds.
  5. Stuff each bell pepper with the sweet potato and black bean mixture.
  6. If using, sprinkle cheese on top of the stuffed peppers.
  7. Place the stuffed peppers in a baking dish and cover with foil.
  8. Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes until the peppers are tender.
  9. Garnish with fresh cilantro before serving.

Notes

  • Feel free to add other vegetables to the stuffing mixture.
  • This dish can be made ahead of time and stored in the refrigerator.
  • For a spicier kick, add jalapeños to the filling.
