Strawberry cheesecake

A delicious and creamy strawberry cheesecake that is sure to impress your guests with its rich flavor and beautiful presentation.

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup fresh strawberries, pureed
  • ½ cup fresh strawberries, sliced for topping

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a springform pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar and vanilla extract, mixing until well combined.
  4. Add eggs one at a time, mixing well after each addition. Stir in the strawberry puree until fully incorporated.
  5. Pour the cheesecake mixture over the crust in the springform pan.
  6. Bake for 50-60 minutes or until the center is set and slightly jiggly.
  7. Remove from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
  8. Before serving, top with sliced fresh strawberries.

Notes

  • For a firmer cheesecake, bake a little longer.
  • Make sure all ingredients are at room temperature for a smoother batter.
  • Can be served with whipped cream for extra indulgence.
