1 head of cauliflower, cut into florets
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup tahini
2 tablespoons lemon juice
2 cloves garlic, minced
1/4 cup water (more if needed)
Fresh parsley, chopped (for garnish)
Instructions
Preheat the oven to 425°F (220°C).
In a large bowl, toss the cauliflower florets with olive oil, salt, and black pepper.
Spread the cauliflower on a baking sheet in a single layer.
Roast in the preheated oven for 25-30 minutes, or until golden brown and tender.
While the cauliflower is roasting, prepare the tahini dressing by whisking together tahini, lemon juice, minced garlic, and water until smooth. Adjust the consistency with more water if necessary.
Once the cauliflower is done, remove it from the oven and let it cool slightly.
To serve, place the roasted cauliflower in a bowl, drizzle with tahini dressing, and garnish with fresh parsley.
