Raspberry chocolate truffles

Delicious raspberry chocolate truffles that melt in your mouth, combining rich chocolate with the tartness of fresh raspberries.

Ingredients

  • 8 oz dark chocolate, chopped
  • 1/2 cup heavy cream
  • 1/2 cup fresh raspberries, pureed
  • 1 tsp vanilla extract
  • Cocoa powder for dusting

Instructions

  1. In a saucepan, heat the heavy cream until it just begins to simmer.
  2. Remove from heat and add the chopped dark chocolate, stirring until melted and smooth.
  3. Stir in the raspberry puree and vanilla extract until well combined.
  4. Refrigerate the mixture for about 2 hours, or until firm.
  5. Once firm, scoop out small portions and roll them into balls.
  6. Roll the truffles in cocoa powder to coat.
  7. Store in the refrigerator until ready to serve.

Notes

  • For a sweeter truffle, use milk chocolate instead of dark chocolate.
  • Make sure the raspberries are fresh for the best flavor.
  • These truffles can be stored in an airtight container in the fridge for up to a week.
