12 large mushrooms
1 cup cooked quinoa
1/2 cup diced bell pepper
1/4 cup chopped onion
2 cloves garlic, minced
1/2 cup shredded cheese (optional)
2 tablespoons olive oil
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Preheat the oven to 375°F (190°C).
Clean the mushrooms and remove the stems.
In a skillet, heat olive oil over medium heat and sauté the onion, bell pepper, and garlic until soft.
In a bowl, mix the sautéed vegetables with cooked quinoa, salt, and pepper.
Stuff each mushroom cap with the quinoa mixture.
If using, sprinkle shredded cheese on top of the stuffed mushrooms.
Place the stuffed mushrooms on a baking sheet and bake for 20-25 minutes.
Garnish with fresh parsley before serving.
Notes
For a vegan option, omit the cheese or use a dairy-free alternative.
Feel free to add other vegetables or spices to the filling for extra flavor.
