One-pot creamy Tuscan orzo

A delicious and creamy one-pot dish featuring orzo pasta, inspired by Tuscan flavors.

Ingredients

  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, fresh
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add minced garlic and sauté until fragrant.
  3. Stir in the orzo and cook for 1-2 minutes.
  4. Add vegetable broth and bring to a boil.
  5. Reduce heat and simmer until orzo is tender, about 10 minutes.
  6. Stir in heavy cream, cherry tomatoes, and spinach.
  7. Cook until spinach wilts and tomatoes soften.
  8. Remove from heat and stir in Parmesan cheese.
  9. Season with salt and pepper to taste.

Notes

  • For a vegan version, substitute heavy cream with coconut cream and omit cheese.
  • Feel free to add other vegetables like bell peppers or zucchini.
