  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with Italian seasoning, salt, and pepper.
  3. Add chicken to the skillet and cook until golden brown on both sides, about 6-7 minutes per side.
  4. Remove chicken from the skillet and set aside.
  5. Add minced garlic to the skillet and sauté for 1 minute.
  6. Add cherry tomatoes and spinach, cooking until spinach wilts.
  7. Pour in heavy cream and stir in Parmesan cheese until melted and combined.
  8. Return chicken to the skillet and simmer for an additional 5 minutes.
  9. Garnish with fresh basil before serving.
