Mushroom and walnut veggie “meat” tacos

Delicious and hearty mushroom and walnut veggie tacos that are perfect for a meatless meal.

Ingredients

  • 1 cup walnuts, chopped
  • 2 cups mushrooms, finely chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 8 small corn tortillas
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a skillet, heat olive oil over medium heat.
  2. Add onions and garlic, sauté until translucent.
  3. Add chopped mushrooms and walnuts, cook until mushrooms are tender.
  4. Stir in cumin, smoked paprika, salt, and pepper, cook for another 2-3 minutes.
  5. Warm the corn tortillas in a separate pan.
  6. Assemble tacos by filling tortillas with the mushroom and walnut mixture.
  7. Garnish with fresh cilantro and serve with lime wedges.
