Ingredients

  • 2 medium zucchinis, diced
  • 1 medium eggplant, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 ripe tomatoes, chopped
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onions and garlic, sauté until translucent.
  3. Add eggplant and cook for about 5 minutes.
  4. Add zucchinis, bell peppers, and cook for another 5 minutes.
  5. Stir in the tomatoes, oregano, thyme, salt, and pepper.
  6. Simmer for 20-25 minutes, stirring occasionally.
  7. Garnish with fresh basil before serving.
