Mediterranean baked tofu

A delicious and healthy Mediterranean baked tofu dish that is perfect for impressing your guests with its vibrant flavors and textures.

Ingredients

  • 14 oz firm tofu, pressed and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, oregano, basil, garlic powder, onion powder, salt, and black pepper.
  3. Add the cubed tofu to the bowl and toss to coat evenly with the marinade.
  4. Spread the marinated tofu on a baking sheet lined with parchment paper.
  5. Scatter the cherry tomatoes, Kalamata olives, and red onion over the tofu.
  6. Bake in the preheated oven for 25-30 minutes, or until the tofu is golden and crispy.
  7. Remove from the oven and sprinkle with fresh parsley before serving.

Notes

  • For extra flavor, marinate the tofu for a few hours or overnight.
  • Serve with a side of quinoa or a fresh salad for a complete meal.
  • This dish can be made ahead of time and reheated before serving.
