  • 1 cup spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 clove garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together spinach, cream cheese, feta cheese, sun-dried tomatoes, garlic, Italian seasoning, salt, and pepper.
  3. Carefully cut a pocket into each chicken breast and stuff with the cheese and spinach mixture.
  4. Shape the stuffed chicken breasts into heart shapes and secure with toothpicks if necessary.
  5. Heat olive oil in a skillet over medium heat and sear the chicken on both sides until golden brown.
  6. Transfer the chicken to a baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through.
  7. Remove from the oven, let rest for a few minutes, then serve warm.
