  • 1 lb shrimp, peeled and deveined
  • 1 cup brown rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 2 limes, juiced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Cook the brown rice according to package instructions.
  2. In a skillet, heat a little oil over medium heat and add the shrimp.
  3. Season the shrimp with chili powder, cumin, salt, and pepper.
  4. Cook the shrimp for about 2-3 minutes on each side until they are pink and cooked through.
  5. In a large bowl, combine the cooked rice, black beans, corn, avocado, cherry tomatoes, red onion, and cilantro.
  6. Drizzle with lime juice and toss to combine.
  7. Top the mixture with the cooked shrimp.
