Healthy lentil vegetable shepherd pie

A nutritious and delicious shepherd’s pie made with lentils and a variety of vegetables, perfect for a healthy meal.

Ingredients

  • 1 cup lentils
  • 2 cups vegetable broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 cup peas
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 4 cups mashed potatoes
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a pot, cook lentils in vegetable broth until tender.
  3. In a skillet, sauté onion, carrots, celery, and garlic until softened.
  4. Add cooked lentils, peas, thyme, rosemary, salt, and pepper to the skillet and mix well.
  5. Transfer the lentil mixture to a baking dish.
  6. Spread the mashed potatoes over the lentil mixture evenly.
  7. Bake in the preheated oven for 25-30 minutes until the top is golden brown.
  8. Let it cool for a few minutes before serving.

Notes

  • Feel free to add any other vegetables you like.
  • This dish can be made ahead of time and reheated.
  • For a creamier mashed potato topping, add a bit of milk or butter.
