Healthy dinner protein bowl

A nutritious and delicious protein-packed bowl perfect for a healthy dinner.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or fresh
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1 lime, juiced
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water, bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  4. In a large bowl, combine black beans, corn, diced bell pepper, lime juice, cumin, salt, and pepper.
  5. Once quinoa is cooked, fluff with a fork and add to the bowl with the other ingredients.
  6. Top with sliced avocado and garnish with fresh cilantro.
