Grilled salmon mango salsa

Ingredients

  • 4 salmon fillets
  • 2 ripe mangoes, diced
  • 1 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste
  • Olive oil for grilling

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine diced mangoes, red bell pepper, red onion, jalapeño, cilantro, lime juice, salt, and pepper to make the salsa.
  3. Brush the salmon fillets with olive oil and season with salt and pepper.
  4. Place the salmon on the grill, skin-side down, and cook for about 6-8 minutes per side, or until cooked through.
  5. Remove the salmon from the grill and top with the mango salsa before serving.

Notes

  • For extra flavor, marinate the salmon in lime juice and olive oil for 30 minutes before grilling.
  • Serve with a side of rice or a fresh salad for a complete meal.
