Ingredients

  • 1 lb chicken breast, cubed
  • 1 cup cashews, soaked
  • 1 can (14 oz) diced tomatoes
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tbsp olive oil
  • 2 tsp garam masala
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tsp paprika
  • Salt to taste
  • Cilantro for garnish

Instructions

  1. Soak cashews in water for at least 2 hours, then drain.
  2. In a blender, combine soaked cashews and diced tomatoes, and blend until smooth.
  3. In a large pan, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  4. Add minced garlic and grated ginger, and cook for another minute.
  5. Add cubed chicken to the pan and cook until browned on all sides.
  6. Stir in garam masala, cumin, turmeric, and paprika, and cook for 2 minutes.
  7. Pour in the cashew-tomato sauce and bring to a simmer. Cook for 15-20 minutes until chicken is cooked through.
  8. Season with salt to taste and garnish with cilantro before serving.

Notes

  • For a spicier version, add chili powder or fresh chilies.
  • Serve with rice or naan for a complete meal.
  • This dish can be made ahead and reheated.
