Cucumber, avocado, and seaweed sushi rolls are a refreshing and healthy sushi option, perfect for a light meal or snack.

Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 4 sheets nori (seaweed)
  • 1 cucumber, julienned
  • 1 avocado, sliced
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rice and water in a pot and bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
  3. Remove from heat and let it sit covered for 10 minutes.
  4. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice.
  5. Place a sheet of nori on a bamboo sushi mat, shiny side down.
  6. Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.
  7. Arrange cucumber and avocado slices in a line across the rice.
  8. Using the mat, roll the sushi tightly away from you, pressing gently to keep it compact.
  9. Seal the edge of the nori with a little water.
  10. Slice the roll into bite-sized pieces and serve with soy sauce.

Notes

  • For added flavor, you can include sesame seeds or pickled ginger.
  • Make sure to use sushi-grade ingredients for the best taste.
  • These rolls can be made ahead of time and stored in the refrigerator.
