Creamy sweet potato and red lentil curry

A delicious and creamy curry made with sweet potatoes and red lentils, perfect for a comforting meal.

Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 cup red lentils, rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can coconut milk (400ml)
  • 2 cups vegetable broth
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, sauté the onion, garlic, and ginger until fragrant.
  2. Add the diced sweet potatoes and cook for a few minutes.
  3. Stir in the curry powder and turmeric, cooking for another minute.
  4. Add the rinsed red lentils, coconut milk, and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer for 20-25 minutes until the lentils and sweet potatoes are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh cilantro.

Notes

  • For a spicier version, add chili powder or fresh chilies.
  • This dish can be served with rice or naan.
