A quick and delicious creamy lemon chicken dish with spinach, perfect for a weeknight dinner.

  • 2 chicken breasts
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 lemon (juiced and zested)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season chicken breasts with salt and pepper, then add to the skillet.
  3. Cook chicken for about 6-7 minutes on each side until golden brown and cooked through.
  4. Remove chicken from the skillet and set aside.
  5. In the same skillet, add minced garlic and sauté for 1 minute.
  6. Add heavy cream, lemon juice, and lemon zest, stirring to combine.
  7. Return chicken to the skillet and add spinach, cooking until spinach wilts.
  8. Serve warm, garnished with additional lemon zest if desired.
