Ingredients

  • 2 ripe avocados
  • 2 cloves of garlic
  • 1 tablespoon of lemon juice
  • 1/4 cup of fresh basil leaves
  • Salt and pepper to taste
  • 8 ounces of pasta of your choice
  • 1/4 cup of olive oil

Instructions

  1. Cook the pasta according to package instructions until al dente.
  2. While the pasta is cooking, prepare the avocado sauce by blending avocados, garlic, lemon juice, basil, salt, and pepper in a food processor.
  3. Once the pasta is cooked, drain and reserve some pasta water.
  4. Mix the avocado sauce with the pasta, adding olive oil and reserved pasta water as needed to achieve a creamy consistency.
  5. Serve immediately, garnished with extra basil if desired.

Notes

  • For added flavor, consider adding cherry tomatoes or spinach.
