Chocolate banana oat blender muffins

Delicious and easy-to-make chocolate banana oat muffins blended to perfection for a quick treat.

Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup cocoa powder
  • 1/2 cup milk (or non-dairy alternative)
  • 1/4 cup honey or maple syrup
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a blender, combine the ripe bananas, rolled oats, cocoa powder, milk, honey (or maple syrup), baking powder, baking soda, and salt.
  3. Blend until smooth and well combined.
  4. If using, stir in the chocolate chips.
  5. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • These muffins can be frozen for up to 3 months.
  • Feel free to add nuts or dried fruit for extra texture.
