  • 2 tomatoes, chopped

  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 1 teaspoon chili powder (adjust to taste)
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle.
  2. Add chopped onions and sauté until golden brown.
  3. Stir in garlic and ginger, cooking for another minute until fragrant.
  4. Add chopped tomatoes and cook until they soften.
  5. Mix in turmeric, garam masala, coriander powder, chili powder, and salt. Cook for a couple of minutes.
  6. Add cauliflower florets and chickpeas, stirring to coat them in the spice mixture.
  7. Add a splash of water, cover, and let it simmer for about 15-20 minutes until the cauliflower is tender.
  8. Garnish with fresh cilantro before serving.
