1/4 cup rice vinegar
1 tablespoon sugar
1/2 teaspoon salt
4 sheets nori (seaweed)
1 ripe avocado, sliced
1 cucumber, julienned
1/2 pound imitation crab meat, shredded
Soy sauce, for serving
Wasabi, for serving
Pickled ginger, for serving
Instructions
Rinse the sushi rice under cold water until the water runs clear.
Cook the rice according to package instructions and let it cool.
In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
Fold the vinegar mixture into the cooled rice.
Place a sheet of nori on a bamboo sushi mat, shiny side down.
Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.
Arrange avocado, cucumber, and crab meat in a line across the rice.
Using the mat, roll the sushi tightly away from you, pressing gently.
Seal the edge of the nori with a little water.
Slice the roll into 6-8 pieces and serve with soy sauce, wasabi, and pickled ginger.
Notes
For a vegetarian option, substitute crab meat with tofu or additional vegetables.
Make sure to use sushi-grade fish if you choose to add raw fish.
