Cabbage, carrot, and tofu Asian slaw

A colorful and nutritious slaw made with fresh cabbage, crunchy carrots, and protein-rich tofu, dressed in a tangy Asian-inspired sauce.

Ingredients

  • 2 cups shredded cabbage
  • 1 cup grated carrots
  • 1 cup firm tofu, cubed
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated ginger
  • 1/4 cup chopped green onions
  • 1 tablespoon sesame seeds

Instructions

  1. In a large bowl, combine the shredded cabbage and grated carrots.
  2. In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey or maple syrup, and grated ginger.
  3. Add the cubed tofu to the cabbage and carrots.
  4. Pour the dressing over the slaw and toss gently to combine.
  5. Garnish with chopped green onions and sesame seeds before serving.

Notes

  • For a spicier kick, add some red pepper flakes to the dressing.
  • This slaw can be made a few hours in advance; just keep it refrigerated until serving.
  • Feel free to add other vegetables like bell peppers or radishes for extra crunch.
