Ingredients

  • 2 large zucchinis
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips.
  3. In a bowl, mix together the ricotta cheese, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and pepper.
  4. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  5. Place a spoonful of the ricotta mixture on each zucchini strip and roll them up.
  6. Arrange the roll ups in the baking dish seam side down.
  7. Top with remaining marinara sauce and sprinkle with extra Parmesan cheese if desired.
