A delicious and healthy baked falafel dinner plate that is packed with flavor and perfect for any meal.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper (optional)
  • 1 tbsp olive oil
  • 1/4 cup breadcrumbs

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, salt, black pepper, and cayenne pepper.
  3. Pulse until the mixture is well combined but still slightly chunky.
  4. Add olive oil and breadcrumbs, and pulse again until mixed.
  5. Form the mixture into small balls or patties and place them on a baking sheet lined with parchment paper.
  6. Bake for 25-30 minutes, flipping halfway through, until golden brown.
  7. Serve with your choice of sides, such as salad, pita bread, or tahini sauce.

  • For a gluten-free option, use gluten-free breadcrumbs.
  • Feel free to add your favorite spices for extra flavor.
